We have a semi-fermented tea from the Chinese province of Yunnan. The infusion of this tea releases earthy and deep flavors, with a slight sweetness on the palate.
To obtain Pu-erh, the tea leaves undergo an accelerated fermentation, in a humid environment, during an aging period of 50 days. This fermentation develops good bacteria as well as undergrowth and earthy notes
